2 cups cooked rice (preferably cold)

200g shrimp, cleaned

2 tbsp butter

3–4 garlic cloves, minced

1 small onion, chopped

1 cup mixed veggies (carrot, peas, corn)

1–2 eggs (optional)

1 tbsp soy sauce

Salt & pepper to taste

Spring onions for garnish

1 tbsp oil
Instructions
1. Prep the shrimp
Season the shrimp lightly with salt and pepper.
2. Cook the shrimp

Heat 1 tbsp oil + 1 tbsp butter in a pan.

Add shrimp and cook until pink on both sides (this takes just a couple of minutes).

Remove and set aside.
3. Make the garlic butter base

Add the remaining 1 tbsp butter.

Add garlic and onions. Sauté until fragrant.
4. Add veggies
Cook the mixed vegetables for 2–3 minutes until softened.
5. Optional: Add eggs

Push veggies aside.

Add eggs to the empty space in the pan and scramble.

Mix everything together.
6. Add rice

Add the cold cooked rice.

Break up clumps and mix well.
7. Season

Add soy sauce, salt, and pepper to taste.
8. Add shrimp back
Toss the cooked shrimp back into the pan and mix everything together.
