Pineapple Pork Afritada


This Pineapple Pork Afritada is a hearty and flavorful twist on a classic Filipino stew. Pork belly or kasim, cubed
Soy sauce
Oyster sauce
Garlic, minced
Onions, sliced
Black pepper
Bell pepper, sliced
Bay leaves
Tomato sauce
Tomato paste
Pineapple juice
Margarine
Cooking oil
Salt
Fish sauce
Guisantes (green peas)
Sugar (optional, to taste)

How to Make Pineapple Pork Afritada:

  1. Marinate the pork in soy sauce, pineapple juice, black pepper, and a little fish sauce for at least 30 minutes. (The longer, the better!)

  2. Sauté garlic and onions in a mix of margarine and oil until fragrant.

  3. Add the marinated pork (reserve the marinade), and cook until lightly browned.

  4. Mix in the oyster sauce, and stir well to coat the pork.

  5. Add tomato sauce, tomato paste, and the reserved marinade. Toss in the bay leaves.

  6. Let it simmer until the pork becomes tender. Add water if needed to adjust the sauce consistency.

  7. Add bell peppers, green peas, and a bit of sugar if you prefer it sweeter.

  8. Season with salt, fish sauce, or additional pepper to taste.

  9. Simmer for a few more minutes until everything is well combined and flavors are rich.

  10. Serve hot with steamed rice!
