Ingredients:

• 2 fresh lobsters (approx.1.5 lbs / 680g each)

• 4 tablespoons unsalted butter, melted

• 2 cloves garlic, minced

• 1 tablespoon fresh lemon juice

• 2 tablespoons fresh parsley, chopped

• Salt and freshly ground black pepper, to taste

• Lemon wedges, for serving

Instructions:

1. Prepare the Lobster:

• Chill the lobsters in the freezer for about 20-30 minutes to numb them, which makes their handling quite easy.

Place the lobster on a cutting board, belly side up. Take a sharp knife and make a deep cut lengthwise down the center of the shell, from head to tail. Do not cut all the way through; leave the two halves connected.

• Open the lobster up and take out the tomalley - the greenish material - and the black digestive tract.

• Kitchen shears can be used to slightly crack the harder parts of the shell to expose more meat for better cooking and easier eating.

2. Make the Butter Sauce:

In a small bowl, whisk together the melted butter, minced garlic, lemon juice, chopped parsley, salt, and black pepper.

3. Preheat the Oven:

• Preheat your oven to 200°C/400°F.

4. Bake the Lobster:

• Put the prepared lobsters on a baking sheet, meat side up.

Spoon half of the butter sauce over the lobster meat evenly.

• Bake for about 12-15 minutes, or until the lobster meat is opaque and white. Cooking time will vary depending on the size of the lobster and your oven.
