Ingredients
1 pound large shrimp, peeled and deveined
2 ears of corn, cut into chunks
1 pound baby potatoes, halved or quartered if large
12 ounces smoked sausage, sliced
3 tablespoons olive oil or melted butter
1 tablespoon Old Bay seasoning or Cajun seasoning
1 teaspoon garlic powder
Salt and pepper to taste
Fresh parsley or lemon wedges for garnish (optional)
Heavy-duty aluminum foil
Instructions
Preheat your grill to medium-high heat or your oven to 425 degrees Fahrenheit.
Boil the baby potatoes in salted water for 7 to 10 minutes until just fork-tender. Drain and let cool slightly.
Cut four large sheets of heavy-duty aluminum foil.
Combine the shrimp, corn, potatoes, and smoked sausage in a large bowl. Drizzle with olive oil or butter. Add Old Bay seasoning, garlic powder, salt, and pepper. Toss until everything is evenly coated.
Divide the mixture evenly among the foil sheets and tightly seal each into a packet.
Place the foil packs on the grill and cook for 15 to 20 minutes, flipping once halfway through. If using an oven, place the packets on a baking sheet and bake for 25 to 30 minutes.
Carefully open the foil packs, watching out for hot steam. Garnish with fresh parsley or a squeeze of lemon if desired. Serve immediately.
