Crispy Zucchini Fritters are the perfect savory snack or side dish! Made with fresh zucchini, herbs, and a light batter, these golden fritters are pan-fried to crispy perfection. Serve them hot with a dollop of creamy yogurt or a garlic dip for a delicious, satisfying bite every time.
1️⃣ Prepare the Zucchini:
- Grate the zucchini using a box grater.
- Sprinkle with 1 teaspoon salt, toss, and let sit for 10 minutes to draw out excess water.
- After 10 minutes, squeeze out as much liquid as possible using a clean kitchen towel or cheesecloth.
2️⃣ Make the Batter:
- In a large bowl, combine the squeezed zucchini, flour, eggs, Parmesan (if using), garlic, pepper, chili flakes, herbs, and green onions.
- Mix well to form a slightly thick batter. If too wet, add a bit more flour.
