Cheesy Tortellini with Beef and Spinach Skillet
A hearty and cheesy one-skillet meal featuring tender tortellini, savory ground beef, fresh spinach, and rich marinara sauce, all topped with melty mozzarella and Parmesan. Perfect for a quick and comforting dinner
1 lb ground beef
1 small onion, diced
3 cloves garlic, minced
1 (24 oz) jar of marinara sauce
1 (9 oz) package refrigerated cheese tortellini
2 cups fresh spinach, roughly chopped
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
1 tsp Italian seasoning
½ tsp red pepper flakes (optional)
Salt and pepper, to taste
1 tbsp olive oil

Cook the Beef:
Heat olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spoon. Drain excess fat if needed. -
Add Aromatics:
Stir in the diced onion and cook for 3–4 minutes until softened. Add the minced garlic and cook for another 30 seconds until fragrant. -
Simmer with Sauce:
Pour in the marinara sauce, Italian seasoning, and red pepper flakes (if using). Stir everything together and bring to a gentle simmer.

Cook the Tortellini:
Add the uncooked tortellini straight into the skillet. Stir to coat them in the sauce, then cover and cook for about 5–7 minutes, or until the tortellini are tender, stirring occasionally. -
Add Spinach:
Once the tortellini are almost cooked, stir in the spinach. Cook for another 2–3 minutes until the spinach is wilted. -
Cheese it Up:
Sprinkle the mozzarella and Parmesan cheeses evenly over the top. Cover and let the cheese melt for about 2 minutes. You can also broil it for 1–2 minutes for a golden cheesy top if your skillet is oven-safe. -
Serve:
Season with salt and pepper as needed. Serve hot, garnished with extra Parmesan if desired.
