 Cajun Prawn Stir-Fry with Noodles

📝 Ingredients

For the stir-fry:

300g (10 oz) prawns/shrimp, peeled and deveined
200g (7 oz) noodles (egg noodles or rice noodles)
1 tbsp olive oil or vegetable oil
1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 small red onion, thinly sliced
2 garlic cloves, minced
1 cup snap peas or green beans (optional)
2 green onions, chopped (for garnish)

For the Cajun seasoning:

1 tsp paprika
1/2 tsp smoked paprika (optional)
1/2 tsp cayenne pepper (adjust to heat preference)
1/2 tsp dried oregano
1/2 tsp dried thyme
1/2 tsp onion powder
Salt and black pepper to taste

For the stir-fry sauce:

2 tbsp soy sauce
1 tbsp oyster sauce (optional, for extra depth)
1 tsp sesame oil
1 tsp honey or brown sugar
Juice of 1/2 lime or lemon

🍳 How to Make It

  1. Cook the noodles according to the package instructions. Drain and set aside.

  2. Season the prawns: In a bowl, toss prawns with Cajun seasoning until evenly coated.

  3. Stir-fry prawns: Heat 1 tbsp oil in a large pan or wok over medium-high heat. Add prawns and cook for 2–3 minutes per side until pink and slightly charred. Remove and set aside.

  4. Sauté veggies: In the same pan, add a bit more oil if needed. Stir-fry bell peppers, onion, snap peas, and garlic for about 3–4 minutes until just tender but still crisp.

  5. Combine everything: Return prawns to the pan, add cooked noodles, and pour in the stir-fry sauce. Toss everything together for another 1–2 minutes until well mixed and heated through.

  6. Serve hot, garnished with chopped green onions and a wedge of lime if desired.
