🍌 Banana Bread Tatin – A Healthy Twist on a Classic Favorite
This Banana Bread Tatin is where comfort meets elegance. A healthier spin on the classic tarte tatin, it features a soft, moist banana bread base with a golden layer of caramelized bananas on top. Naturally sweetened with ripe bananas, honey, and coconut sugar, it’s free from refined sugar but full of rich flavor. Perfect for brunch, dessert, or an afternoon treat, this upside-down banana loaf is as beautiful to serve as it is satisfying to eat. One slice, and you'll be hooked!
📝 Ingredients
For the caramelized base (Tatin-style):
2 ripe bananas (sliced lengthwise)
2 tbsp coconut sugar or brown sugar
1 tbsp coconut oil or butter
2 ripe bananas (mashed)
2 eggs
1/4 cup honey or maple syrup
1/4 cup olive oil or melted coconut oil
1 tsp vanilla extract
1 cup whole wheat flour (or oat flour for gluten-free)
1 tsp baking soda
1/2 tsp cinnamon
Pinch of salt
Optional: 1/4 cup chopped nuts or dark chocolate chips

Preheat oven to 350°F (175°C). Grease a loaf pan or line with parchment.

Make the caramel base:
In a small pan, melt coconut oil and stir in the coconut sugar. Pour into the bottom of your loaf pan. Arrange sliced bananas on top. -
Mix wet ingredients:
In a bowl, whisk mashed bananas, eggs, honey, oil, and vanilla. -
Add dry ingredients:
Stir in flour, baking soda, cinnamon, and salt until just combined. Fold in nuts or chocolate if using. -
Assemble and bake:
Pour batter over the caramelized bananas in the pan. Smooth the top. -
Bake for 35–45 minutes, or until a toothpick comes out clean.

Let cool for 10 minutes, then carefully flip onto a plate so the caramelized bananas are on top. (Like a banana bread upside-down cake!)

Want extra moistness? Add 2 tbsp Greek yogurt to the batter.
